Ingredients of Vegetarian Eggs Benedict Recipe

  • 1 tablespoon margarine
  • 2 ounces  sour cream
  • 1 dash of paprika
  • 1 dash of nutmeg
  • 1 dash red pepper or cayenne pepper
  • 1/4 lb. solid tofu
  • 3 tablespoons apple cider vinegar
  • 1 dash of salt
  • 2 tablespoons olive oil
  • 1/2 tsp. lemon juice
  • 1 English muffin
  • 2 slices faux Canadian bacon
  • 2 slices tomato

Preheat your oven to 450 degrees. Take a small mixing bowl, add vinegar, salt, olive oil, and tofu (chop into pieces). Put the contents of the bowl into an 8″x8″ square baking pan, and keep baking for 20 minutes, flipping your tofu pieces regularly. As your tofu is cooking, you prepare your hollandaise sauce and create your faux bacon. Moderately heat, mix your margarine, sour cream, paprika, nutmeg, pepper, and lemon juice. Heat the mixture till bubbles emerge. Pour the hollandaise sauce over for a tasty serving.
